Steve Callari Custom knives are my favorite way to cut in the kitchen. We just got our third, a 6.5" chef's knife, out of AEB-L because the ladies in this house do not like the patina on the carbon steel SCCs we already have. Oh well, a man's got to do what he must to keep the ladies in his life happy.
