Casual sharpening session on one of my most used knives, a Japanese gyuto made by Mazaki - 210mm white steel blade. I keep this one simple, only using a NanoHone 1000 grit ceramic whetstone and a leather strop laded with Gary Creely Sharp Condition diamond compound 3 micron.
