Kitchen Kutlery: TwoSun TS509-Tanto (Knife Content)

Published: 3 years ago

I'm not in love with the name of this series, but alliteration is always fun.

Anyway, this is a new series I'm kicking off, after picking up a considerable amount of kitchen knives from TwoSun. I also plan on taking a look at the rest of my workhorse lineup that includes Messermeister, Shun, Zwilling J.A. Henckels, Nexus and even Lamson Sharp.

Today is a blade that I was pretty excited about. It boasts 67-layer damascus cladding with a 15Cr12MoV core that I'm not overly familiar with. An interesting blade shape that you don't see too often in the kitchen, and the start to me playing around with more Japanese-style knives.

This isn't supposed to be used as a deba, so the pinch grip doesn't work super great in my hands, but with it's length, it's what I want to do. I guess this should be used with the point grip (or "accuser"). I suppose I'll revisit it later on to see if my opinion changes.

Specs:
7.3" 15Cr12MoV blade with 67-layer damascus cladding
Ebony wood handle with composite bolster and mosaic pin
6.4 oz / 181 gram weight
3 mm blade stock thickness
