Kitchen Kutlery: Nexus 9.5" Chef in BD1N Steel (Knife Content)
Published: 3 years ago
This bad mamma-jamma is a little too much blade when cooking for one. At the time I purchased this, I didn't see a smaller chef knife available. It's a bit sword-like and requires a larger than standard cutting board.
The spine was a bit too sharp out of the box, so I ended up knocking them down with diamond & ceramic stones. Made the pinch grip much more comfortable.
It's excellently balanced, has a nice polished G10 handle with pins and uses CTS-BD1N steel, so it's a step up from a lot of what's on the market currently. That being said, it's in the same camp that most are going to with a European-style knife with the hardness of a Japanese-style knife, so it's easily chipped if irresponsibly used.
