Kitchen Kutlery: TwoSun TS519-DM 7.75" Chef knife in 15Cr12MoV
Published: 3 years ago
Quite the good chef's knife overall. a tiny bit short of the standard 8", but they give you extra finger clearance at the heel that compensates for that.
Handle is uber-thick, so those with baseball mitts for hands can comfortably use this thing comfortably.
I may revisit this as one of my favorites once I finish checking out all of the extra kitchen knives I have. I still think the TwoSun TS999 is a bit better, but I'll have to throw them head to head.
I unfortunately don't have a more commonly known steel to compare the 15Cr12MoV to, but it seems to be working quite well. I know a lot of those steels have a bad name due to so many cheap knives using 8Cr13MoV or 7Cr17MoV, but not all of them are inferior to other steels.
Specs:
7.75" 15Cr12MoV blade with damascus cladding
G10 handle scales with red interior liners
Mosaic pin at center
