Kitchen Kutlery: TwoSun TS508 DM Overview & Review (Knife Content)

Published: 3 years ago

Maan, I really wanted to like this thing a lot. On the outside, it looks a lot like the TS977, just being a standard chef's knife with good ergonomics and a raindrop damascus pattern blade rather than the 14C28N.

In reality, it's very similar to the TS977, but the blade geometry is a bit different. Seems as though the core steel (10Cr15MoV) is quite substantial, and they didn't grind it super thin behind the edge. It does add structural stability to the edge. It's setup a bit more like a Henckels or Wustoff.

This is a great thing if you're looking for an east/west fusion knife that favors the west in geometry. That's just not quite what I'm looking for. For most solid things, it performs very well. For dense leafy things (cabbage, lettuce, stacked greens, etc.) it's a bit more difficult to get through than I'd like.

It's a neat knife, super pretty, with great fit and finish and details. But it still hasn't dethroned my TS999 for favorite chef's knife.
