Kitchen Kutlery: TwoSun TS607 Nakiri in 8Cr14MoV (Knife Content)

Published: 3 years ago

Alright, the elephant in the room was I was mistaken on what the core steel for this knife was in the review. It's 8Cr14MoV which isn't super great. Quite unfortunate as this has been my favorite Nakiri I've tried thus far.

It has an interesting shoulder about a third of the way up that thins the blade out quite a bit. As a result, it slices through things like a laser beam. During my testing, it stayed decently sharp, but that steel is less than ideal. I would have preferred 15Cr12MoV, or at least 10Cr15MoV for the core to keep it up with the rest of their knives.

Oh well. The ebony handles are great. It's a traditionally built Japanese knife, so it's not full tang, the balance is blade-heavy and only secured with a single pin. If that's a turn off, I totally get it.
