Kitchen Kutlery: TwoSun TS526 Santoku (Knife Content)
Published: 3 years ago
So, this is the Santoku from the same line that the TS503 Chef's knife is in. As such, this doesn't have the best blade geometry. That being said, it feels better to cut with than the TS503. I wasn't getting bound up on taller objects like I was with the Chef's knife.
The layered rosewood handle provides some nice grippy texture. Also helps if it gets a little damp... but if it gets slimed up, it's not going to work any better than others.
The fit and finish for the handle seems a bit off. The butt cap and blade bolster are proud of the wood. It's possible that it was machined correctly, and the wood shrunk due to evaporation afterward, if it's not "stabalized". Not sure. It's not uncomfortable to use at all, but noticeable when you're feeling for it.
Still, a competent santoku, but not the best. The blade steel could be better, the geometry could be improved and the fit/finish leaves a bit to be desired.
