Kitchen Kutlery: TwoSun TS520 Cleaver in 10Cr15MoV & Ebony Wood (Knife Content)
Published: 3 years ago
This cleaver is bangin'. It's dethroned the Messermeister Park Plaza cleaver I've used for close to 20 years.
The steel is pretty comparable to the Messermeister. It has a taller blade which I find helpful for slicing through tall objects (Melons, cabbage, etc) and can hold on to a bit more food when cutting before it topples off the top of the blade.
It also has a bit more heft due to the forged blade so less external force is needed for cutting.
The handles are strangely orange and black slats of ebony wood. You might mistake it for G10 at first, but looking closer you do see the natural fibers and definitely feel them in your hand. They've been stabilized like Pakkawood, so it feels similar to Shun knife handles.
Keep in mind, this is a Chinese-style VEGETABLE cleaver. You're not going to want to whack through raw bones with it during food prep.
Meat cleavers are much different, being sharpened at a steeper degree and less sharp; more like a hand axe. Most of them also include a hole near the top of the blade for hanging since their edges aren't sharpened like light sabers.
