Sakai Takayuki santoku: A sharp Kitchen Knife

The Sakai Takayuki is my favorite kitchen knife at the moment. The laminated (damascus) VG10 keeps it's edge quite long on the right cutting boards. What I like about these kind of Santoku knives is that they can fit almost all cutting purposes in the kitchen.

A sharp knife is a safe knife. My girlfriend knows the sharpness of my knives so she uses it with much care. She works in a Japanese restaurant in the kitchen at the moment so she knows how to handle these kind of knives.
