Hand-forged Japanese chef’s knife with a blade length measuring 20 cm from the Eden Susumi series.

Eden Kanso Susumi knives are thinly honed and razor-sharp. They are made from SG2 powdered steel, which is stainless and with a hardness of 62-63 HRC also extremely hard. The side of the steel is also considerably harder than most Damascus steel knives, which means that the side of the knife is far less susceptible to scratches.
