Chop Shop is Park City's first butcher shop. Opened in late 2020, it's the creation of John Courtney, Chuck Heath, and Dan Ibach. Chef and Butcher of this European-inspired farm-to-table operation, John Courtney, seemed like the perfect person to take New West's new Carving Set for a spin. He's a man of few words, but the smile on his face and the clean slices in front of him make it clear he means what he says.
