Steel knives are in the 52 to 56 level of Rockwell hardness.
High quality knives are in the 56 to 58 range.
Exceptional knives are at 62 Rockwell hardness.
But now, with the introduction of our new “Sandrin” Knife, it is the only blade in the world made of tungsten carbide, and it’s rated at 71 Rockwell C
