How to take care of your knife while field dressing. In this video Randy Newberg is field dressing an elk on the public lands of New Mexico and he explains basic knife care while using his new Gerber EBS knife. It's important to protect your cutting edge when working on part of the animal that can quickly dull your knife.
The EBS & DTS allows you to use different blade for different parts of the animal. Use the tool or serrated edge on tendons or thick parts of the hide, while being able to keep your main blade sharp for cutting meat or basic skinning.
It's also important to cut with the grain of the hair rather than against it. Cutting parallel to the hide is another tip that preserves your edge.
