How to remove the lower legs while field dressing. In this video, Randy Newberg is working on the lower legs of an elk in New Mexico. He explains how to remove the lower section of the leg from the quarters.

He shows how to do it with both the exchange blade system as well as the dual-tool system from Gerber Gear. To remove this part of the animal, all it requires is finding the appropriate joint and cutting through all the tendons that connect it to the main leg.

Once you've used the tool or the serrated edge to cut through the tendons, you can start twisting or bending the joint trying to dislocate it. You may have to whittle through some last bits of connective tissue before the leg totally separates.
