How to debone elk quarters. In this episode of the field dressing series, @Fresh_Tracks explains how he debones an elk quarter, while on a hunt in New Mexico. Using both his Gerber DTS as well as his EBS Randy goes through each steps in properly taking care of your meat while removing the bones to save weight.

All you are doing is trying to keep the meat intact in one piece while filleting the leg bone out of it. This principle applies for both the front and hind quarter. You can start at a ball joint or wherever makes the most sense and cut down to the femur or shoulder blade. Then you can just shave the meat away from the bone and making sure to not leave any excess meat attached to the bone.
