Smoky Shrimp & Gnocchi Foil Packets Media

Serves 4 – Here’s how:
Smoky Butter:
8 tbsp unsalted butter (room temp)
4 garlic cloves, grated
1 tsp smoked paprika
½ tsp red pepper flakes
Salt & pepper — mix until smooth.
Foil Packets:
1 (17.6 oz) pkg gnocchi
1 lb raw shrimp, peeled
1½ cups corn
1 pint cherry tomatoes, halved
2 tbsp thyme
¼ cup olive oil
Salt & pepper
Toss everything in a bowl with oil, salt & pepper. Divide between 4 foil sheets. Top each with 3 tbsp smoky butter. Seal packets.
Grill over medium-high 12–15 mins, flipping once. Open carefully, squeeze with lemon juice, sprinkle with parsley. Serve right from the foil!
