Filet mignon in cast iron skillet with a side dish called pap. The filet mignon is complemented with a mushroom and cheese sauce. Pap is a South African staple food that are eaten by many different cultures.

Below you will find the filet mignon recipe.

Filet mignon steaks:

Olive Oil to dress the steaks
Salt & pepper to taste
3 chopped garlic gloves
Butter for grilling

Prep the steaks 25 min prior to grilling them. The longer you let them rest the saltier they will taste.

Filet Mignon sauce

8.8 oz of mushroom
3 x heaped tbs cake flour
8.4 fl oz milk
7 oz cheddar cheese
pepper to taste
5 tbs of heaped butter

Grill the mushroom until brown. Remove grilled mushroom to use later in the sauce. Melt the 5 tbs of butter in skillet, add the cake flour and gradually add the milk until it becomes a smooth sauce. Add pepper to taste, the cheese and mushrooms. Simmer for 5 minutes.

Pap (Similar to grits) - Cooking time is 20 minutes:

Water - Amount is dependant on how much pap you want to make
1 tbs salt
Maize Meal, which is the pap, is also dependant on how much you would like to make.

Get your pot very hot and add the water. Add salt and the pap to the pot. Stir until it becomes sticky and dry. Let it cook for 20 minutes and stir it every 2-3 minutes.

Sauce for the pap:

Olive oil for grilling
1 x chopped onion
3 x chopped garlic gloves
1 x can chopped and peeled tomatoes
1 x 1.76 oz tomato paste
mixed herbs

Heat the skillet. Add olive oil to the skillet and add the chopped onion. Add the garlic, chopped tomatoes and mixed herbs. Simmer for 20 minutes.

Grill the steaks for 3 minutes on each side. Add more butter and garlic to give extra flavour to the steaks.
