You're not bad at sharpening knives. You're probably just trying to sharpen bad knives. What we are talking about here is edge geometry. How much material is on the blade, and how thin it is on the edge? Production factory knives leave extra metal on the blade. Oftentimes, these factory knives flex in the machine, burn, or overground the blade, creating an inaccurate dip in the edge that doesn't correctly contact a cutting board. This leaves you laboring away at a stone, taking so many passes to work your way down to the edge.
